A smoke brazier covering three functions in one cabinet: roasting, drying and cold smoking. That combination lets a producer run several different process flows through a single machine rather than committing floor space to each. The unit is made up of a smoke box, an automatic programmator, a smoke generator and a smoke car. The programmator is the part that matters commercially, because smoking is defined by a sequence of temperature and density stages held over time; running that sequence automatically is what makes one batch repeat the last. The machine also sterilises the product during cooking, so the thermal step that makes the food safe and the step that gives it flavour happen together rather than as separate handling stages. It is in use in domestic and overseas markets.
