The practical differences are speed and evenness. Energy is absorbed by the water throughout the material, so the centre dries at a similar rate to the surface and the product does not case-harden with a dry shell over a wet core. Supplied in batch and continuous configurations. Material handling matters as much as the microwave power, and the belt or tray type is chosen to suit.
