A continuous microwave dryer passing product through a tunnel on a belt while microwave energy removes moisture. Unlike hot air drying, which heats the surface and relies on conduction inward, microwave energy is absorbed by the water throughout the material.
That difference matters for anything where surface overheating damages the product: drying is faster, the core dries at the same rate as the outside, and colour and aroma are better retained.
