Filling method is chosen from the liquid. Thin free-flowing liquids such as water suit gravity or overflow filling, viscous products such as sauce and honey need a piston filler, and foaming products need bottom-up filling to avoid filling the bottle with foam. Getting that wrong is the usual cause of a filler that will not reach its rated speed.
