A food extruder cutter, the rotating knife assembly that cuts the extrudate to length as it leaves the die face.
Cut quality depends on blade sharpness and on the gap between blade and die. A dull or badly set blade tears rather than cuts, leaving ragged pieces that are visible in the finished product and that behave inconsistently in drying.
