Food Smoke House
A microprocessor-controlled smokehouse supplied in four trolley sizes, from a single-trolley chamber at 25 to 38 kW up to a four-trolley chamber at 90 to 97 kW, all electrically heated. The controller operates the whole technological process in the chamber: the flaps, the smoke generator ignition, and the operating level the generator runs at. Programmable parameters include the temperature inside the product, the temperature inside the chamber and the chamber humidity, among others. Smoking is defined by holding those three against time, so programming them is what makes one batch repeat the last. The smoke generator burns chips of 3 to 10 mm with electric ignition. A built-in temperature sensor monitors combustion and automatically triggers the extinguishing system if the chips catch fire, which is the standard failure mode of a chip generator and the reason the sensor is fitted rather than optional.
